These rustic, fall-inspired cookies have all the flavors of our favorite apple pie, but in cookie form.

  • 1/2 cup vegan butter softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup chopped pecans
  • 1 cup chopped apples
  • for the caramel sauce: 
  • 1/4 cup brown sugar
  • 3 tbsp coconut cream
  • 1/4 teaspoon salt
