Blood Orange Sauce

1

Prepare the blood orange sauce

Preheat your waffle maker. While it heats, combine the peeled, chopped blood oranges, 2 tablespoons sugar, fresh lemon juice, and blood orange zest in a blender. Puree until completely smooth.

2

Thicken the sauce

Transfer the orange puree to a small saucepan. Heat over low heat, stirring occasionally, until the sauce has thickened to your desired consistency. Set aside and keep warm.

Waffles

1

Make the waffle batter

Add the water, vegan milk, flour, rolled oats, sugar, coconut oil, baking powder, vanilla extract, cinnamon, nutmeg, and salt to a blender. Blend until completely smooth with no lumps remaining.

2

Cook the waffles

Pour the batter onto your preheated waffle iron, ensuring complete coverage of the waffle plates. Close the lid and cook for 8-11 minutes, or until the waffles are golden brown and crispy on the outside.

3

Serve

Transfer the waffles to plates and generously drizzle with the warm blood orange sauce. Serve immediately with optional maple syrup and a dusting of powdered sugar.
